Today, we are making 2 kinds of Yakitori (Skewered Chicken), salted and sweet soy sauce.
Yakitori Ingredients
(serves 2)
300g Chicken (0.661 lb.)
12 Shishito Peppers
1 Spring Onion
2 Shiitake Mushrooms
Salt
1/4 Lemon
Seven Flavor Chili Pepper
3 Shiso Leaves
Yakitori Sauce
100ml Soy Sauce (3.38 fl. oz)
100ml Sake (3.38 fl. oz)
3 tbsp Brown Sugar
1 tbsp Honey
1 clove of Garlic
Yakitori Guide
Preparing Yakitori Ingredients
Remove skin from the chicken with knife and fat using kitchen shears (pair of scissors). Beat the chicken with a knife thoroughly so that the chicken becomes tender. Cut the chicken into stripes and cut them again into one-inch pieces.
Remove stems of Shishito Peppers and Shitake Mushrooms. Cut spring onion into one-inch pieces. Peel garlic clove and crush them with the knife’s flat-side. Cut lemon into half and slice each into 4 equal wedges. Soak bamboo skewers in water to prevent burning.
Preparing Yakitori Sauce
Add soy sauce, sake, brown sugar, honey and garlic into a pot. Turn on burner and dissolve sugar over medium heat. When it starts to boil, remove the foam with a scoop. Reduce the heat and let sauce cool a bit.
Making Yakitori
Stick chicken and spring onion alternately (one after the other) using a Bamboo Skewer. This is called Negima (Chicken with Scallion Skewers with Yakitori Sauce). Place remaining chicken left on the skewers.
Stick Shishito peppers and spring onion alternately and finish it off with a Shitake mushroom. Stick 8 Shishito peppers into a skewer.
Cooking Yakitori
Turn on Yakitori Burner. Sprinkle salt on few Yakitori to create salted Yakitori. Line up salted Yakitori and vegetable skewers over the burner. When bottom side is cooked, flip over the Yakitori. Dip vegetable skewer into sauce, lightly roast and place them on a plate. When salted Yakitori are cooked, served on a plate.
The remaining unsalted Yakitori will be dipped into sweet soy sauce. Flip Yakitori to cook evenly. Dip Yakitori into the sauce and roast them over burner. Repeat the dipping process 2 or 3 times until Yakitori becomes golden brown.
Serving Yakitori
Serve Yakitori with Shiso leave and lemon. Squeeze lemon juice over the salted Yakitori. You can sprinkle Seven Flavor Chili Pepper onto the soy sauce Yakitori.

Sweet soy sauce and seven flavor chili pepper are a popular combination. Yakitori sauce can be stored in a fridge and reheated for reuse. The repeated dipping of Yakitori brings out the rich flavor of the sauce.
