New York Cheese Cake is a popular dessert that relies heavy or sour cream to create a smooth, dense and creamy cake. It’s biscuit crust base is topped with soft cheese with fruits, nuts and/or chocolate. Today will be introducing lemon-flavored New York Cheesecake.
New York Cheese Cake Ingredients
250g Graham Crackers or digestive biscuits (9 oz)
150g butter
200ml sour cream (7 oz)
1 tbsp powdered sugar
1 tsp vanilla extract
2 tbsp of cane sugar
100ml heavy cream
600g Philadelphia cream cheese (21 oz)
20g cornstarch
juice of half a lemon
3 eggs
100g sugar

Preparing Cheesecake Base
Heat butter in a pan till it becomes liquid and turn off burner. Crush Graham Crackers with cane sugar using food processor. Combine melted butter with processed mixture into a bowl. Stir until mixture is dense.
Cut a piece of parchment paper to the same diameter of the spring-form pan. Buttered the spring-form pan and place parchment paper in it. Cover the bottom and side of pan with crushed Graham crackers. Refrigerate the crusted base for an hour or 20 minutes in freezer.
Preparing Custard Mix
Add cream cheese, cornstarch eggs heavy cream, lemon juice, salt and sugar into a bowl and mix them well. Pour custard mixture into the crust. Bake the cake for 30 minutes at 350 Fahrenheit (175 Celsius). Then lower temperature to 320 Fahrenheit (160 Celsius) and bake for another 30 minutes.
Add sour cream, powdered sugar and vanilla extract into a bowl and mix. Put mixture on cake and form a layer on top of it. Place cake into oven for another 5 minutes at 360 Fahrenheit (182 Celsius) and cool it on a rack.

Finally, garnish cake with strawberries, blackcurrant, red berries, and/or caramel.
