Molten Chocolate Lava Cake is a luscious and chocolatey dessert that you can make quickly when you have unexpected guests, leaving them open-mouthed! This popular dessert is also known as Chocolate Volcano Cake as opening its center oozes warm runny chocolate.
Molten Chocolate Lava Cake Ingredients
155g dark chocolate (5.5 oz)
2.5 tbsp flour
2 eggs and 1 yolk
A pinch of salt
1.5 tbsp of cocoa powder (+1 tbsp for cake tins)
5.5 tbsp butter (+1 tbsp for buttering cake tins)
2/3 of a cup of powdered sugar (+1 tbsp for decoration)
1/2 vanilla pod OR 1 tsp vanilla extract OR a pinch of vanilla powder.

Molten Chocolate Lava Cake Preparation
Making Chocolate:
Chop chocolate and melt it in Bain-Marie or microwave. Bain-Marie are ramekins placed in large ceramic plate filled with hot water. It is normally used for making custards or baking something in oven. Cut butter into cubes and melt with the mixture, before taking off from burner for cooling.
Place room-temperature eggs into mixer followed by sifted powdered sugar and scrapped vanilla pod (without seeds). Turn on mixer to mix mixture until light and foamy (approximately 10 minutes). Set mixer to low speed before adding in the cooled melted butter-chocolate mixture. Add sifted powder cocoa-powder with flour and a pinch of salt. Mix them well with spatula till there are no lumps.
Baking Cake:
Butter cake tins and coat with cocoa powder before filling mixture. Bake at 350 Fahrenheit (175 Celsius) for 13-15 minutes. If you bake it a 1 minute longer, the center of chocolate cake will not be liquid!
Serving Cake:
Rest the cakes for few minutes after taking out from oven. Place chocolate cakes on dessert plate and dust with powdered sugar before serving.
