Cherry Tomato Tart Ingredients
(Makes 1 tart)
1 tsp thyme, minced
1 tsp oregano, minced
salt and pepper to taste
230 g cherry tomatoes, halved
45g fontina, grated
170g part-skim mozzarella, grated
1 sheet puff pastry, thawed and cut into a 9″x 6″ (23 x 15 cm) rectangle
Cherry Tomato Tart Preparation
Preheat oven to 400 Fahrenheit (205 Celsius). Toss both fontina cheese and mozzarella cheese in a small bowl. Sprinkle cheese tossing evenly over puff pastry without covering 13mm from border.
Put red-yellow tomato halves on cheese mixture. Lightly season with salt and pepper. Put puff pastry on baking sheet with lined with parchment. Bake for 15-20 minutes or until tart’s edges become golden brown.
Cool tarts for 5 minutes before sprinkling minced herbs. Cut cherry tomato tart into 4 pieces and serve.
