Tiramisu Cupcakes Ingredients

(Serves 12)

For the cupcake:
2 eggs
1/4 tsp salt
3 tbsp milk
1 cup warm water
1/4 tsp baking soda
2 tbsp cocoa powder
1 tsp vanilla extract
1 cup granulated sugar
1.5 cups all-purpose flour
3 tbsp instant espresso powder
1/3 cup vegetable oil or melted unsalted butter.

For the topping:
mini chocolate chips
1 cup heavy whipping cream
2 tbsp powder sugar (confectionery sugar)

Tiramisu Cupcakes Preparation

Making Cupcake:
Preheat oven to 350 Fahrenheit (175 Celsius) and line cupcake pan with liners and set it aside. Dissolve instant espresso in hot water (120 Fahrenheit / 48 Celsius). Avoid using regular espresso as its not easily dissolve. Set liquid aside for couple of minutes.

Combine all-purpose flour, unsweetened cocoa, baking soda and salt in a bowl. Mix them well using spatula/whisk or stand-mixer to avoid lumps in cupcakes. Add in eggs, sugar, vegetable oil, milk and vanilla into the mixture. Mix them again until all ingredients are incorporated. Stream in instant espresso while constantly mixing for a minute.

Divide batter using ice-cream scoop into cupcake. Bake cupcakes in oven for 18-20 minutes or test it by inserting a toothpick into cupcake’s center and if it comes out clean, the cupcake is well done. Cool cupcakes completely before topping with whipped cream.

Making Whipped Topping:
Whisk heavy whipping cream in a bowl until it has soft-peaks. Add in confectionery sugar and whisk it till it becomes stiff-peaks. Top the cupcakes with fresh whipped cream and sprinkle with mini chocolate chips to give a little texture.

Tiramisu Cupcakes Tips

Your batter might look too liquid for a cupcake batter but trust me, if you put any more flour than this, it will become too dense after baking. Use a ice-cream scoop to distribute batter evenly into all cupcake. Use confectionery sugar instead of regular sugar to avoid having grainy texture in cupcake.

Traditional Tiramisu sprinkles cocoa powder on whipped cream, but using mini chocolate chips gives a little more texture to the soft sponge from cupcake and creamy topping.
