Strawberry Cupcakes with Peanut Butter Frosting Recipe

Today we’ll be introducing Strawberry-Filling Cupcakes with Peanut Butter Frosting, a simple-to-make dessert. You could use other types of seedless-jam fillings bought from your local grocery or made fresh at home.

Strawberry Cupcakes and Peanut Butter Frosting Ingredients

(Serves 12)

For cupcake:
2 eggs
1/8 tsp salt
1.5 cup cake flour or all-purpose flour
1/3 cup whole milk
1 tbsp baking powder
1/2 cup vegetable oil
2 tsp vanilla extract (or 1 tbsp for more flavor)
3/4 cup granulated sugar

For filling:
1 cup of seedless jam of any preferred flavor (this recipe uses strawberry jam)

For frosting:
1/2 tsp vanilla extract
1 tbsp milk if required
1 cup smooth peanut butter
8 oz cream cheese at room temperature
2.5 cups powder sugar (confectionery sugar)
1/4 cup unsalted butter at room temperature

Strawberry Cupcakes and Peanut Butter Frosting Preparation

Making cupcakes:
Preheat oven to 350 Fahrenheit (175 Celsius). Line a muffin tin with liners and set aside. Mix flour, salt and baking powder in a small bowl and set this dry ingredients aside.

Combine sugar, vegetable oil, eggs and vanilla extract in a bowl. Cream them well with a whisk or stand-mixer. Mix in half dry-ingredients and half milk till they aren’t visible, and repeat this step for remaining half.

Distribute mixture evenly with ice-cream scoop into each muffin tin. Bake for 20 minutes or until toothpick inserted into cupcake’s center comes out clean and set them aside.

Making frosting:
Mix cream cheese, butter, peanut butter and vanilla extract until creamy using whisk or electric-mixer. Add confectionery sugar and mix again, followed by 1 tbsp of milk. Mix till the frosting becomes thick consistency.

Prepare 2 piping bags, each using a disposable bag fitted with a plain tip and the other star tip. Fill jam in plain tip bag while peanut butter frosting in star tip bag. Insert the plain tip far into the cooled cupcake and pipe in 1 tbsp of jam. Don’t over pipe otherwise it cracks the cupcake. Pipe frosting on top of the jam in spiral.

Garnishing cupcakes:
Sprinkle some chopped peanuts to add some texture to the peanut butter frosting.

Strawberry Cupcakes and Peanut Butter Frosting Tips

Cake flour makes cupcakes tender and moist complimenting the rich heavy peanut butter frosting, but if you want to use plain all-purpose flour, feel free to because chances are you have it at hand and you don’t need to make a special trip for it.

Cream cheese and butter must be at room temperature, otherwise both won’t mix well.

Here are a list of jams you can use for this cupcake filling to give you some idea: strawberry jam, raspberry jam, blackberry jam, pineapple jam, apricot jam, orange jam.
