Today’s Special Recipe

[STARTERS] Roasted Tomato Soup

Serves: 4

Ingredients:
4 tbsp olive oil
10 plum tomatoes, halved
1 white onion, thinly sliced
2 garlic cloves, halved
2 thyme sprigs
1 tsp white sugar
2 bunches of basil
1 quart chicken or vegetable stock
Salt and freshly ground black pepper

Preparation Steps:
1) Combine tomatoes, onion and garlic in mixing bowl.
2) Season with olive oil, salt and pepper.
3) Lay out on a baking tray.
4) Sprinkle with thyme, basil and sugar.
5) Roast in oven at 425 degrees until caramelized.
6) Pour tomatoes into a blender and puree.
7a) While blender running, ladle in hot stock to smooth the soup.
7b) You may not use all of the stock.
8) For garnish, heat olive oil, lightly saute the tomato clusters on the vine.
9) Serve on top of the soup with thin sliced basil.
